I made a zero waste Basil Smash with clarified basil-cucumber cordial (using agar agar for clarification) which can be used to make delicious, elegant and fast Basil Smashes! Perfect for summer gatherings with friends or for busy shifts in cocktail bars. But I try to keep Cocktail Time sustainable so I made a food pairing snack for this cocktail – Tzatziki with the cucumber used for a cordial, which would otherwise go to waste.
