[ASMR] Lacto-fermented tomatoes: 2 recipes with zero waste

Step by step how to fermented tomatoes to make a sauce and a powder seasoning.

ASMR

We use a small variety of tomatoes called datterino, but you can try this #fermentation #recipe with any kind of tomato. If you have a larger variety, cut the tomatoes into quarters.
To avoid surface mold, mix the tomatoes at least once a day.
Taste the released juice daily to check the evolution of the fermented flavor.
Once in the fridge, the flavor of the sauce will continue to evolve, becoming more acidic and umami rich.

The tomatoes sauce can be blended and used as it is with pasta, pizza, as a dipping sauce or as a fresh raw soup base.
The skin powder is a perfect seasoning for enhancing the tomato flavor in a salad, for dipping or tomato sauces and even to season dressing preparations.

Paso a paso cómo fermentar tomates y preparar una salsa y un condimento en polvo.

Utilizamos una variedad de tomate pequeño llamado datterino, pero puedes probar esta #receta de #fermentación con cualquier tipo de tomate. Si tiene una variedad más grande, corta los tomates en cuartos.
Para evitar el moho en la superficie, mezclar los tomates al menos una vez al día.
Prueba el jugo de la preparación diariamente para verificar la evolución del sabor fermentado.
Una vez en la heladera, el sabor de la salsa seguirá evolucionando, volviéndose más ácida y rica en umami.

La salsa de tomate se puede mezclar y usar para pasta, pizza, como aderezo o como base para una sopa cruda fresca.
El pulverizado de las pieles es un condimento perfecto para mejorar el sabor del tomate en una ensalada, para salsas dipping, para condimentar salsas de tomate e incluso para sazonar cualquier tipo de aderezos.

Come fermentare i pomodori e preparare un sugo e una polvere di condimento.

Usiamo pomodori datterini, ma puoi provare questa #ricetta di #fermentazione con qualsiasi tipo di pomodoro. Se hai una varietà più grande, tagliare i pomodori in quattro.
Per evitare la muffa superficiale, mescolare i pomodori almeno una volta al giorno.
Assaggiare quotidianamente il succo rilasciato per verificare l’evoluzione del sapore fermentato.
Una volta in frigo, il sapore del sugo continuerà ad evolversi, diventando più acido e ricco di umami.

Il sugo di pomodoro può essere utilizzato per la pasta, la pizza, come salsa dipping o come base per fare zuppe crude fresche.
La polvere di buccia è un condimento perfetto per esaltare il sapore del pomodoro in un’insalata, per condire salse dipping o sugo di pomodoro e anche per le preparazioni tipo dressing.
