️“Thala Aggala” is a renowned delicacy made by mixing jaggery, dates, scraped coconut and macerating with sesame seeds lastly making into a bolus. “Thala Aggala” with a hot cup of plain tea is a match made in heaven or an ale for a tedious day. 🧆️
️The aroma that originates when the fried sesame seeds are being pounded is almost breath-taking, and definitely disperse throughout the neighbouring homes . Then the pounded sesame seeds are ground for 15mins using warm water. Grinding should be till the oil is extracted from the seeds, this technique is similar to that of extracting milk from scraped coconut. Next the solution is filtered using a cotton cloth and the residue is removed, finally the supernatant is left overnight undisturbed.
️A flour dough was prepare 1 hour before using sesame seeds and matcha powder to make roll buns for the evening tea. A seasoning is made using sesame seeds cocoa powder, brown sugar and sprinkled atop the butter layered dough rottee uniformly. Then the dough rottee was rolled along its vertical axis and sliced with a piece of thread. Once placed on the oven after about 30 mins the odour it gives off is astounding and appetizing. 🥯
️The following morning starts with a glass of Kola Kenda and a piece of jaggary. As for my little brother this morning wasn’t so enthusiastic . The way oil had extracted atop the supernatant leaving its residue to the bottom seemed so awe-inspiring. If the residue contaminates the oil, it become rancid, therefore sesame oil needs to be separated slowly and steadily with a hollow spoon.
️ Powdered white rice and purple yam flour were fried on a pan till an aroma arise. The Aluwa mould was prepared by mixing the fried mixture of flour, cardamom powder with 2 to 3 sesame seed handfuls finally adding them to the sugar syrup. Once the proper consistency appear, the mould was poured atop a plank and cut quickly into diamond shaped pieces before losing the heat.
️ I took a parcel made of hot Aluwa pieces to my little sister’s home. Her little ones loved tasting the warm Aluwa pieces, but they were elated to see “Sakkan” and “Moyan”. 🦮
