🥣 Method:
Transfer 400g | 14oz chickpeas to a sieve.
Save chickpea water.
Grate 1 medium size zucchini (about 230g)
Grate 1 or 2 medium size carrots (about 150g)
Add pinch of salt.
Mix well and set aside.
Cut 1/4 onion.
Chop 2 garlic cloves.
Dry 250g | 8oz extra firm tofu with paper towel.
Add 1/2tsp paprika
1tsp Italian herbs.
Salt to taste.
Squeeze liquid from grated zucchini and carrots.
Add 1 tbsp olive oil.
Pulse until combine. Be careful not to pulse too much as we want to avoid making hummus and getting a puree like texture
Add 60g | 2oz chickpea flour.
Pulse again.
Oil spray the baking tray lined with parchment.
Roll out the mixture into nuggets shapes.
Dip nuggets into the chickpea water.
Roll in chickpea crumbs or bread crumbs until coated thoroughly.
Transfer to a baking tray lined with parchment.
Bake nuggets in the preheated oven 400F | 200C for 30 minutes.
In order to get evenly-crisped nuggets, flip them halfway through the total bake time.
Dipping sause recipe:
Mix the following ingredients:
1/2 cup | 4fl oz plant based mayo
3tsp yellow mustard
2tbsp barbecue sauce
1tbsp agave nectar
1/2tsp paprika
1/2tsp garlic powder
1tsp lemon juice
