in this video I dry meat for preservation over my woodstove. I bought some inside round beef and cut it into thin strips. I marinated the meat overnight in garlic, sriracha and lime seasoning, hot sauce and maple syrup. I laid the meat on my drying rack above my woodstove and dried it for about six hours, rotating and flipping after 3 hours. If dried properly this meat will last for months without refrigeration. Beef, Deer, Moose, Buffalo or Beaver would work fine for drying. Don’t forget to trim any fat as fat doesn’t dry properly. I learned to make this from my mom but she made her version in the oven.
