Ingredients used in this recipe:
Broth
– two medium carrots
– one medium onion
– celery roots (any part can be utilized)
– one leek
– a bunch of chives and parsley
– shrimp shell and heads
-salt to taste
Cook for about 30 minutes and strain the liquid to use as broth
Risotto ingredients
– 250 arborio rice for risotto
– one large chopped onion
– one large garlic clove, minced
– 150 mL of rosé wine ( white wine is also ok)
– 300g peeled and cleaned prawns or shrimps (check for the sustainability MSC or ASC certified)
– one Italian seedless chopped tomato
– 30 g of butter to be used at the beginning and finalization
– 100 g Parmesan cheese grated
